Espresso – Bold and Intense

Espresso is all about precision. Follow these steps for a rich, bold shot with a beautiful crema:

What You Need:

  • Espresso machine

  • Freshly ground coffee

  • Tamper

  • Scale

  • Timer

Steps:

  1. Grind: Use a fine grind size, similar to table salt. Aim for about 20 grams of coffee.

  2. Preheat: Preheat your espresso machine and portafilter to ensure even extraction.

  3. Dose: Place 20 grams of ground coffee into the portafilter and tamp evenly with consistent pressure.

  4. Brew: Attach the portafilter and start the shot. Aim for 40ml of espresso in 30 seconds.                                                          Adjust grind size if the extraction is too fast or slow.

  5. Serve: Enjoy as a shot or add steamed milk for a classic cappuccino or latte.

Pro Tip: Keep your equipment clean for the best flavour, and experiment with different grind sizes for a balanced shot.

Pour Over – Clean and Balanced

Pour over brings out the delicate and complex flavors of coffee. Here's how to master it:

What You Need:

  • Pour-over dripper (e.g., V60, Chemex)

  • Paper filter

  • Freshly ground coffee

  • Gooseneck kettle

  • Scale

  • Timer

Steps:

  1. Grind: Use a medium grind, like coarse sand. Use 17 grams of coffee per 250ml of water.

  2. Bloom: Place the filter in the dripper and rinse with hot water. Add the coffee, then pour 40ml of hot water (95 degrees) and let it bloom for 30 seconds to release gases.

  3. Pour: Gradually pour the remaining water in slow, circular motions, ensuring even saturation. Total brew time should be around 2-3 minutes.

  4. Serve: Swirl the coffee in your mug and enjoy the clean, bright flavours.

Pro Tip: Use a gooseneck kettle for more control over your pour, and adjust the grind size to tweak extraction.

French Press – Rich and Full Bodied

The French Press is perfect for those who love a robust and full bodied cup. Here's how to get it just right:

What You Need:

  • French Press

  • Freshly ground coffee

  • Stirring spoon

  • Scale

  • Timer

Steps:

  1. Grind: Use a coarse grind, similar to sea salt. Measure 60 grams of coffee for 1 liter of water.

  2. Preheat: Rinse the French Press with hot water to maintain temperature.

  3. Bloom: Add the 60g of coffee and pour twice the amount of water (about 120ml) to bloom for 30 seconds.

  4. Brew: Add the remaining water, stir gently and place the lid on top (without pressing). Brew for 4 minutes.

  5. Plunge: Slowly press down the plunger and pour the coffee immediately to avoid over extraction.

Pro Tip: Use a timer to track your brew time, and experiment with longer or shorter brewing for different flavour profiles.

Aeropress – Quick and Versatile

The Aeropress is known for its versatility and portability, producing a clean and smooth cup.

Here's a basic recipe to start with:

What You Need:

  • Aeropress

  • Paper filter

  • Freshly ground coffee

  • Stirring paddle

  • Scale

  • Timer

Steps:

  1. Grind: Use a medium-fine grind, like table salt. Measure 17 grams of coffee.

  2. Preheat: Insert a paper filter, rinse with hot water and assemble the Aeropress.

  3. Add Coffee: Place coffee into the Aeropress and add 200ml of hot water. Stir for about 10 seconds.

  4. Press: Attach the plunger and slowly press down for 20-30 seconds. Aim for a total brew time of 1 minute.

  5. Serve: Dilute with hot water if desired or drink it as a strong concentrate.

Pro Tip: Experiment with the inverted method for different extraction results and try different water-to-coffee ratios for a customized cup.

Cold Brew – Smooth and Refreshing

Cold Brew is the go to for a refreshing coffee experience, offering a smooth, low-acidity cup perfect for hot days.

Here’s how to make it:

What You Need:

  • Cold brew maker or large jar

  • Freshly ground coffee

  • Stirring spoon

  • Scale

  • Filter (cheesecloth or paper)

Steps:

  1. Grind: Use a coarse grind, similar to breadcrumbs. Use a ratio of 1:8 (e.g., 125 grams of coffee for 1 liter of water).

  2. Combine: Place coffee in your jar or cold brew maker and add cold, filtered water. Stir well to saturate all grounds.

  3. Brew: Cover and let it steep in the fridge for 12-24 hours, depending on your desired strength.

  4. Strain: Filter the coffee using a cheesecloth or paper filter to remove grounds.

  5. Serve: Pour over ice and dilute with water or milk to taste.

Pro Tip: Use a higher coffee-to-water ratio for a concentrate that can be stored longer and diluted as needed.​
